Lulu B. Chardonnay is sourced from vineyards near Limoux, an appellation nestled in the Pyrenean foothills on the western edge of the Languedoc region. The sloped vineyards allow for maximum sun exposure and uniform grape ripening, while the high elevation encourages both warm days and cool nights. The soils are composed of mostly clay and limestone, which lend distinctive minerality and pronounced, fruity aromas. The harvest takes place in the early part of the day, between 4am and 12pm with this year's harvest extending from the end of August until beginning of September. After a six-hour cold pre-fermentation maceration, vinification takes place in stainless steel tanks. The temperature of the fermentation is rigorously controlled and the wine does not undergo malolactic fermentation. 15% of the wine was aged in oak barrels for a creamy finish and full body.
